Onigiri is Japan's most beloved comfort food โ a perfect triangle of seasoned rice, wrapped in crisp nori, filled with something wonderful. It's the food of bento boxes and convenience stores, of grandmothers and long train rides.
We bring that tradition to Banff. Every morning, we hand-press each onigiri using premium short-grain Koshihikari rice imported from Niigata Prefecture. Our fillings blend Japanese technique with the best of the Canadian Rockies โ wild Pacific salmon, local vegetables, and imported umeboshi.
No machines. No shortcuts. Just rice, nori, and something good inside.
